Coconut Blossom

Ingredients
270g self-raising flour (if using plain flour add 1/2 teaspoon of baking powder)
180g or 200g caster sugar (depend on your own taste)
1/2 teaspoon ovalete/sponge gel/other emulsifier
1/4 tsp salt
100ml coconut milk
70ml pandan water (blend some pandan leaves with little bit of water)
3 large eggs (use 4 eggs if tge size smaller)
a drop of green colouring (optional)
Some small paper case

Method
Sift the flour and put in the side. In small bowl,combined together coconut milk, pandan water and salt, mix well.
In another bowl, beat the egg, sugar and emulsifier until fluffy. Fold in the flour,continue with mix coconut milk stir until just combined. Add a drop of green colouring and mix well.
heat up steamer, line the steam mould cake with paper case. 
Spoon little bit of batter into the mould, add in a bit of coconut filling & cover with another spoon of batter. Steamed for about 12-15 minutes.

Coconut filling
200g fresh coconut grated
150g palm sugar
a pinch of salt
1/4 cup water
2 knot pandan leaves

Method.
Boil sugar, pandan leaves, salt & water until the sugar dissolve. Add in coconut stir well.
Cook the coconut until little bit dry and sticky into your hand. (Dont over cook because if too dry no tasted :D ). Let it cold before using.

Bahan.
270g tepung self-raising (bisa pakai tepung terigu protein sedang an tambahkan 1/2 sdt baking powder). dia ayak
180g atau 200g gula pasir (tergantung selera kemanisan masing-masing)
100ml santan kental
70 ml air pandan (beberapa daun pandan yang diblender dengan sedikit air dan disaring)
1/4 sdt garam
3 butir telor ukuran besar (jika kecil pakai 4 butir)
1/2 sdt ovalete/sponge gel/sp/tbm atau emulsifier apa saja
Sedikit pewarna hijau jika suka
Secukupnya cup kertas yang ukuran kecil

Caranya.
Panaskan pengukus. Campur santan, air pandan dan garam, sisihkan.
Kocok gula,  telor dan ovalet hingga mengembang. masukkan tepung bergantian dengan campuran air pandan.Tambahkan pewarna (jika pakai) aduk rata.
Tuang sedikit adonan kedalam cetakan yang sudah dialasi dengan cup kertas, kemudian isi dengan sedikit isian kelapa lalu tutup dengan adonan lagi diatasnya. Kukus selama kurang lebih 12-15 menit.

Isian kelapa
200g kelapa parut putih
150g gula melaka/gula merah
1/4 gelas air
2 lembar daun pandan
sedikit garam

Caranya.
rebus gula, garam, daun pandan dan air hingga gula larut.
Masukkan kelapa aduk hingga rata. Masak sampai kelapa agak kering dan tanak sambil sesekali duaduk agar tidak hangus bagian bawahnya. Dinginkan sebelum digunakan.
